Setup and change timezone in Linux very simple. You can see current timezone:
ls -l /etc/localtime
And current date:
date
Also you can see exist timezones:
timedatectl list-timezones
And grep if you need:
timedatectl list-timezones | grep Amsterdam
Then set timezone:
timedatectl set-timezone Europe/Amsterdam
And again check settings:
ls -l /etc/localtime
date
